Superbowl 46

I hear that the New York Giants are playing the New England Patriots in Super Bowl 46, this Sunday.  I could spend this post talking about the big game, the odds, the match up between Tom Brady and Eli Manning,....

Let's face it, I know absolutely nothing about football.  I do know, no Super Bowl Sunday would be complete without...wait for it....a party!!!!  So, if you are looking for some last minute ideas, here we go! ***Warning, put down your calorie counter.***

First off, keep it simple.  No need to have a fully stocked bar.  Instead, stock up on beer, wine, soda and a few specialty "team themed" cocktails.  You can really get creative here.  Load up on finger foods, hot dogs, sliders, chips, nuts, a crock pot filled with mini  meatballs (and rolls on the side).  Let's not forget the sweet treats!

Make a variety of "theme" cookies and cupcakes.  For example:

Chocolate Guinness Cupcakes

1             Cup Guinness Stout
1 & 1/2   Sticks unsalted butter
3/4          Cup unsweetened Chocolate Chunks
2             Cups all purpose flour
2             Cups sugar
1/2          Tablespoon baking soda
3/4          Teaspoon salt
2              Large eggs
3/4           Cup Sour Cream


  1. Simmer butter and stout over a medium heat. (DO NOT BOIL)
  2. Add chocolate chunks and whisk until melted.
  3. Remove heat and let cool.
  4. Add sugar and whisk to combine.
  5. In a bowl combine Flour, baking soda and salt.
  6. Whisk together eggs and sour cream at medium speed, with an electric mixer.
  7. Add stout mixture.
  8. Combine on low to medium speed until fully combined.
  9. Slowly ad flour mixture in thirds to the chocolate mixture.
  10. Add to cupcake liners to medium size muffin pan.
  11. Fill each cup about 2/3 full.
  12. Place in a preheated (350 degrees) oven.  Bake 18-25 minutes or until firm to the touch.  (A toothpick should come out clean when inserted.) 
  13. Let cool before frosting and decorating.
Yields apx 24 cupcakes.


Make a ref cupcake - Make your favorite cup cake and wrap each in black and white paper or card-stock.  Get creative with the frosting.

Team Cupcakes - Make your favorite cup cake and frost or decorate them with each teams colors.

Guacamole
Four ripe avocados
Juice from 2 small limes
Half Tablespoon garlic powder
Half Tablespoon chili pepper
Half a chopped red onion
Four seeded cherry tomatoes, chopped
Half Tablespoon Hot Sauce
Salt and pepper to taste
For extra spicy, add half a chopped chipotle peppe
  1. Halve and empty contents of avocados into a large bowl. 
  2. Use a fork to crush into chunks
  3. Add garlic powder and chili pepper, mix well
  4. Fold in onion, tomatoes, and chipotle pepper (if using)
  5. Mix hot sauce and lime juice together
  6. Add to guacamole and mix well
  7. Salt and pepper to taste and refrigerate for 1 hour before serving

I'm told the game kicks off on NBC around 6P (EST).  Don't forget Madonna and Cirque du Soleil will perform during this year's half time festivities. 

If all else fails and you REALLY don't want  to watch the game then set up a separate room for the non-sports fans to watch movies!!!
