Edible Gift Tags

Edible Gift Tags


Sugar Cookie Dough: 
2 cups all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
4 tablespoons (½ stick) unsalted butter, softened
½ cup granulated sugar
1 egg
1 teaspoon vanilla extract
2 tablespoons whole milk
  • Combine the flour, baking powder and salt in a small bowl and set aside.
  • In a stand mixer fitted with the paddle attachment, beat the butter and sugar until light and fluffy. 
  • Add the egg and vanilla and continue to mix until incorporated.
  • Beat in the milk, then add the flour mixture. (Mix until dough forms.)
  • Wrap dough in plastic wrap and refrigerate for at least 2 hours, or until firm.
  • Preheat the oven to 350°F. 
  • Line a baking sheet with a liner or parchment paper and cut out the gift tag templates.
  • Roll out the chilled dough on a floured work surface to about ¹⁄8-inch thick. 
  • Use a sharp knife to cut around the template, and carefully place the cookies 1 inch apart on the baking sheet.
  • Gather and re-roll scraps to make more cookies. 
  • Use a straw to punch a hole in the top of each tag.
  • Bake for 10 minutes or until the edges turn golden brown. 
  • Let cool.

Royal Icing:
4 cups (about 1 lb.) confectioners’ sugar
3 tablespoons meringue powder
¼ cup water
1 teaspoon vanilla, almond, or lemon extract
Gel food coloring
  • Combine the sugar, meringue powder, water and vanilla in the bowl.  
  • In a stand mixer, fitted with the whisk attachment, beat until icing is shiny and soft peaks form. (The consistency is right when you remove the whisk attachment and the peaks falls onto themselves. If icing is too thick, add more water, one teaspoon at a time. If it’s too runny, add more confectioners’ sugar.)
  • Depending on how many colors you want, divide the icing evenly into small bowls, and color with food coloring. 
  • Once colored, scoop icing into piping bag fitted with a size 3 tip.
To Assemble:
  • Use a small offset spatula to spread royal icing on the top one-third of the cookie, then cover with sprinkles or crushed candy canes.
  • To personalize, pipe message in royal icing and set aside to harden.
  • Once dry, carefully loop a ribbon through the hole and tie the tag to a wrapped gift. (If your gift will be handled a lot, place the cookie in a flat cellophane gift bag before attaching.)

Almond Cookie Tiramisu

INGREDIENTS:

  • 24 Almond butter cookies


    SOAKING SYRUP 

  • 1/2 cup warm water
  • 2 tbsp powdered sugar
  • 2 tbsp coffee powder



FILLING

  • 1 1/2 cup beaten whipped cream
  • 2 1/2 tbsp powdered sugar
  • 2 tsp coffee powder
  • a few drops of vanilla essence

  1. Combine all the ingredients in a bowl and fold gently.
  2. Fill into a piping bag fitted with a star nozzle and keep refrigerated.

GARNISH

  • 4 tbsp grated chocolate
  • 4 tbsp almond slivers


DIRECTIONS 
  1. Dip 12 cookies, one by one, in the soaking syrup and place them on a plate.
  2. Pipe a bit of filling mixture onto each cookie.
  3. Dip the remaining cookies, one by one, in the soaking syrup and place them over the filling.
  4. Garnish with chocolate and almonds.
  5. Refrigerate at last 30 minutes.

  1. Serve chilled.*** any butter cookie can be used.***

12 servings

Gooey Chocolate Chip Caramel Peanut Butter Bars

Gooey Chocolate Chip Caramel Peanut Butter Bars



INGREDIENTS:
  • 2 (16 oz.) packages of refrigerated chocolate chip cookie dough 
  • ½ cup evaporated milk
  • 60 whole caramels (unwrapped)
  • ½ cup peanut butter (melted-you can melt it in microwave)
  • 1/3 cup semi-sweet chocolate chips
DIRECTIONS:

  • Preheat oven to 375° F and grease 9 x 13-inch jelly-roll pan (baking sheet or pan with rims).
  • Spread one package of cookie dough into prepared pan and bake for 8 to 10 minutes. 
  • Remove pan from oven and set aside.
  • In a double boiler (a metal bowl set over a saucepan of boiling water) melt caramels with ½ cup evaporated milk.
  • When melted and combined, add ½ cup melted peanut butter and pour over cookie base. 
  • Sprinkle chocolate chips as evenly as you can over the caramel.
  • With the second package of cookie dough, drop dough by rounded tablespoonfuls evenly onto caramel and chocolate chips mixture; press down lightly.
  • Bake for 15 to 20 minutes or until golden brown and edges are set. 
  • Cool in pan on wire rack.

Snowball Cookies / Russian Tea Biscuits

Snowball Cookies / Russian Tea Biscuits 




INGREDIENTS:

2 Cups - All purpose flour
2 Cups - Finely chopped pecans
1/4 Cup - Sugar
1 Cup - Butter (Softened)
1 tsp - Vanilla
Powdered sugar


DIRECTIONS:
  • Heat oven to 325°F. 
  • Combine all ingredients except powdered sugar in bowl. 
  • Beat at low speed, scraping bowl occasionally, until well mixed. 
  • Shape dough into 1-inch balls. 
  • Place 1 inch apart onto un-greased cookie sheets. 
  • Bake 18-25 minutes or until very lightly browned. 
  • Cool 5 minutes
  • Roll in powdered sugar while still warm and again when cool.

Happy New Year 2014




The end of a year, and the beginning of another, is a great time to review, refresh  and delete.

Review:  Go through your experiences.  Filter through the good, the bad and the ugly.

Refresh:  Hold on to all the things that are good, or that work for you.

Renew:  Improve on all the things and experiences that are worth keeping.

Delete:  Rid yourself of all the things in your life that aren't working for you.   
Sweep out all the things you don't need to be involved in.  

You'll make room for all the good that's awaiting you in 2014.

How it is and how it was....

Valentine's day is right around the corner.  

Now I could write something mushy about how you should love the one your with.  Or, I could write something cynical, like the story of St. Valentine shedding his blood for love.  However, I won't go there...umm...well, I won't go there in detail!  Instead I thought I'd share some rituals new and old.



Then.....

Armpit apples: Ladies, is the flirting and small talk getting your crush to notice you?  If not, try this old school, I mean 1700's (Victorian) old school, ritual.  Before you go to the ball...errr...I mean dance...I mean club, stick an apple or apple slices under your armpit.  At the end of the night, give it to your favorite guy.  If he likes you, apparently he'll take a bite of your sweaty armpit apple.  (Apparently this ritual may still be alive and well in rural Australia.) Personally, I'd be a little weary of this one.  The guy could just be a freak!  Maybe it's just pheromones, but your safest bet is to stick with serving up chocolates from a box.


Bundling: Once a common practice, males and females would spend the night together, in the same bed....but, tightly wrapped in separate blankets, with a "bundling board" between them.  Honestly, would this practice work now?  I think NOT!


Dance Cards: Apparently the Victorians also enjoyed dance cards.  Yes ladies, you'd always have someone to dance with at the club.  Gentlemen would sign dance card in order to take a spin around the floor.  It was considered poor form to have an available line on your dance card.  Equally, it was poor form not to dance with everyone who signed your card! In other words ladies, you can't say no if your asked to dance!


Gloves:  So in old world England, men would send gloves to their crush.  If she was interested she'd wear them.  This ritual seems really sweet, but I still don't think it would work in modern times.  
              Men were also required to wear gloves when courting. Typically a courting visit didn't last longer than half-hour and the gloves always stayed on. Oh to be forbidden from touching!  Actually, ice-skating and roller-skating became wildly popular because it was socially acceptable to touch while participating in these activities. 


Visiting Girls: This chinese (Dai) ritual entails women sitting around a bonfire, men wearing blankets and playing instruments. Each musician selects a woman to serenade.  If she likes him, she pulls a stool from under her skirt for him to sit on.  The man, in turn, wraps his blanket around her and they do what people in love do....get your mind out of the gutter...they whisper sweet nothings into each other's ears.






Now.......


Dating: He's willing to take you out in the day time...where people can see you.  If he only wants to see you at his house or yours....it's a "booty" call!


Laughter:   If he laughs at your jokes, even if they are not funny.  He's in it to win it.


Online dating:  This one is self explanatory!


Text:  If he's interested he'll text/email you between lunch and dinner.  Anything later than that is a "booty" call!






As a side note, say it with music: You might make your intended a CD with a list of favorite songs, which express your intensions.  Be carful with your song selection. Depending on the stage of your relationship you might select: (“So Into You” Fabolous; “Tell Me What We’re Gonna Do Now” Joss Stone; “Lost Without U” Robin Thicke;“Let’s Get It On” Marvin Gaye; “L-O-V-E” Joss Stone; "Lucky” Jason Mraz feat. Colbie Caillat; “Make You Feel My Love” Adele; “Sunday Morning” Maroon 5; “Wonderful Tonight” Eric Clapton;“Marry Me” Train)....Again warning, if you put this list of songs on a CD, you better be ready to commit!


So if your brave enough to do it, on Feburary 14th, let your secret crush know your in tune with them, or at the very least you'll want to offer them your armpit apple, to see if they bite!

If your single, enjoy it!   Just think, you've saved yourself from creepy cupid.  You've saved yourself from the hassle of shopping for chocolates, flowers, champaign, lingerie, mylar balloons, mushy cards, candlelit dinners, overstuffed teddy bears, over priced jewelry.....I rattle that off as if it matters.

Let's face it, there's really nothing wrong with spending the night with someone you really love, YOU!!!

Casual Holiday Party Time....

Are you planning on throwing a Christmas, Boxing Day or New Year's Eve holiday party at home? Would you like to do that as nice and inexpensive as possible?

First, remember it's all about presentation.  You can attain elegance on a budget, by keeping your decorations simple and the food table brightly colored.  The idea is to use as much of what you already have on hand to make things look good.   For instance, use real plates, cutlery and cloth or fancy paper napkins.
    .  Send an e-card or e-vite instead of paper invitations.
    .  Almost every town has a dollar store, discount emporiums or
   low cost retailer.  Shop there for decorations that you don't already
   have around your house.   Use white tea &/or floating candles
   along with pillar candles wrapped with ribbon.  Surround them
   with pinecones for a more festive look.  You can also fill your
   fireplace with the candles and/or pine cones.  Use tree decorations 
   to string along stairs or over mantels.  Wine glasses can be turned
   upside down if you run out of holders.  You can also fill glasses
   with sand, cat box filler or decorative rocks to hold taper
   candles in place.






  •     .       For inexpensive holiday scents simmer some apple cider, fresh cloves and cinnamon on your stove, instead of buying pricey pre-made potpourri; you can also try simmering cinnamon and vanilla extract.  It gives the aroma of freshly baked goodies. 
               Use a roll of quilting batting as a tablecloth.  You can make snowflakes to hang using copy paper and glitter then hang with fishing line.


  •     Offer appetizers and desserts.   Make party mix instead of 
        nuts.  Do vegetable trays instead of meat trays or at least make
        a larger vegetable tray than meat tray.  Have crock-pots or
        warmers filled with pre-made (chestnut, etc.) soup, chowder,
        chili. Add a crunchy breadbasket.   You can also try layering
        veggies and dip in individual servings.  Fill votive
        candleholders with berry salad.  If you are good at baking,
        make your own desert; if not try buying some festive deserts.



  •     .      To minimize the cost of alcohol you can make available lemonade, coffee, tea or other soft drinks and a big bowl of alcoholic fruit punch.  Or, tell friends to bring a bottle of their favorite alcoholic beverage to introduce to others.  You can also empty box wines (like black box) into decanters.
        .       Here are a few more ideas for your table snacks.

Warm a mix of olive types with a bit of olive oil and a pinch of crushed red pepper in a sauté pan. Serve in small bowls as a pre-dinner snack.
* Roast whole raw almonds in a 350-degree oven for 15 minutes. Toss with Kosher salt, a touch of olive oil, and some citrus zest.

* Make your own gourmet chips by toasting pita bread in a 350-degree oven for 15 minutes. Sprinkle with salt, pepper, and olive oil.   

* Cube cheese, maraschino cherries, and olives skewers and place with assorted crackers and/or assorted crunchy bread.

*Stuffed baby Red potatoes or twice baked potatoes.

*Baked ziti.   

*Hot Spinach Spread with Pita Chips.
*Spicy meatballs.  

*Variety grilled chicken wings.
*Stuffed baby Red .


Rent Christmas CDs from the library and play them during the party.  You can also play old fashion board games or watch movies.  Have children make and decorate ornaments.


  •     .  If you are a guest at a party.
        .  Bring something along.  A bottle of wine, dessert, etc.
        .  Don't arrive late.
        .  Don't be a wallflower.
        .  Don't lose control, especially at a work party.
        .  Don't show up your boss at a work party.
        .  Don't tell racy jokes, especially at a work party.
       .   Most of all HAVE FUN!!!!

Ginger Snaps

 


INGREDIENTS: 

    • 1½  cups butter (softened)
    • 2 cups sugar
    • 2 eggs
    • ½ cup molasses
    • ½ cups all-purpose flour
    • 3 tsp baking soda
    • 2 tsp ground cinnamon
    • 1 tsp ground ginger
    • 1 tsp ground cloves
    • ½ tsp salt
    • ½ tsp ground nutmeg
    • Additional Sugar 



  1. In a mixing bowl, cream butter and sugar. 
  2. Add eggs, one at a time, beating well after each addition. 
  3. Beat in molasses. 
  4. Combine the flour, baking soda, cinnamon, ginger, cloves, salt and nutmeg; gradually add to creamed mixture. Refrigerate for 1 hour or until dough is easy to handle.
  5. Roll into 1-in. balls; roll in sugar. 
  6. Place 2 in. apart on ungreased baking sheets. 
  7. Bake at 350 °F for 8-12 minutes or until puffy and lightly browned. Cool for 1 minute before moving to wire racks.

Yields: 5 Dozen

Happy Easter Monday

I have wondered how Easter eggs & Jesus are connected!

The truth is, so many holidays bombard us that we just look for any excuse for a day off. The "Bunny", has taken over Easter! "Santa", has taken over Christmas! The secularization of these holidays have made them virtually unrecognizable in their current state.

So if nothing else, I think we should spend the time loving and caring for our family and friends.
